Rainbow Vegetable Rolls with Almond Sauce Recipe

How many colors of the rainbow of fruits and veggies do you eat on a daily basis? Each color represents different vitamins and minerals that keep our whole mind, body, and spirit connected and healthy.

The colorful ingredients in these Rainbow Vegetable Rolls will leave you feeling nutritized from the inside out and the beautiful appearance will leave you feeling happy from the outside in.

Rainbows are special, we see them appear in the sky just after the pouring rain and sometimes we wish we could just wrap ourselves in them and slide down and find that pot of gold. Another thing that is special is pouring a nice refreshing cup of almond milk into your recipes and enjoying that silky, soothing liquid sliding down your throat and creating happy cells.

Today is actually a very special day; Not only is it my sister’s (or family member’s) birthday, but February 16th is National Almond Day!!! Yes, today is a day to indulge in those heart-healthy almonds.

It’s a favorite among so many because of its healthy omega-3 fats, and nutty, vanilla, melt-in-your-mouth-creamy-like taste and texture! Did you know it’s super easy to make yourself so you can avoid all those processed stabilizers and preservatives!

  • Combine 1 cup of almonds to 4 cups of water in a blender for 2 minutes, then –
  • Filter liquid through a nut-milk bag or cheesecloth to remove almond skins and pulp, and refrigerate for a couple hours.
  • You can add a tsp of liquid stevia or 1-2 dates as a natural sweetener to strained milk.
  • and voila, you have a delicious and nutritious nut milk!

Back to the nutrient benefits of almonds:

They have moisturizing Vitamin E which is also good for brain health.

Loaded with fiber, they can help support feeling satiated so you don’t feel the need to snack on extra sweets.

They are rich in protein and contain calcium to help build strong bones.

Below you can wrap yourself in a delicious colorful recipe to get your servings of fruits and veggies all in one meal and roll around having the thai of your life in almond sauce!

Rainbow Vegetable Rolls with Thai Almond Sauce 


For the Rolls:

  • Rice paper for rolling
  • 1/2 cucumber, sliced into matchsticks
  • 1 1/2 cups carrots, sliced into matchsticks or shredded
  • 1 cup beets, sliced into matchsticks or shredded (can also use cabbage)
  • 2 cups brown rice vermicelli noodles, cooked according to package directions
  • 1 1/2 cups cilantro, stems included
  • 2 cups Boston or leafy green lettuce, roughly chopped


For the Sauce:



To make the rolls:

Step 1. Make sure ingredients all washed and prepared on your cooking station before rolling.

Step 2. Dip the rice paper in warm water, only for about 20 seconds or it will be difficult to roll. Paper will be softened but not completely soft.

Step 3: Lay down slightly firm rice paper on a clean rolling surface and start assembling ingredients. During this time, the rice paper should have become soft and gelatinous.

Step 4: Start neatly placing down your filling ingredients in the bottom 1/3 of the rice paper, making sure you have lots of room to roll up.

Step 5: Gently pull the paper away from the work surface and roll over the filling. Use your fingers to gather and tuck in the filling ingredients as you roll tightly along. Fold in the sides after one roll rotation and continue to roll until you reach the end.

Step 6: Eat right away or store in the fridge. Fresh is best for these spring rolls, and they have a tendency to stick if they are stored too close together. Layering each row with plastic wrap or parchment paper could help if storing for later.

To make the sauce:

Just combine all ingredients in a mini chopper and blend until smooth. Otherwise, you can whisk all ingredients together until smooth.
