QUINOA AVOCADO SALAD RECIPE
1.5 cups cooked quinoa
1 tsp. onion, grated
4 tomatoes, diced
1.5 seedless cucumbers, chopped, (peeled if not organic)
3 celery stalks, diced
2 avocados, diced
2 sprigs of fresh mint leaves, chopped
bunch parsley, chopped
1/2 cup dried cranberries or raisins
dash sea salt
juice of 2 lemons
*Optional: 1 BPA-free can/jar of hearts of palm, chopped
1. Put onion, tomatoes, cucumber, and celery in a large bowl.
2. Add avocado, mint, parsley, and cranberries/raisins.
3. Add salt, lemon, and mix well.
4. Add cooked quinoa, mix well, and Enjoy!
-Can be served hot or cold
