Zucchini Pasta Recipe


Servings: 4

3 zucchinis
1 carrot

For Sauce:
2.5 cups tomatoes, chopped
½ cup olive oil

¼ cup onions, diced
4 cloves of garlic
1 date, pitted
½ cup portabella or button mushrooms
1 tbsp. each of parsley, cilantro, mint, basil, leaves, thyme, ginger
½ tsp. sea salt
1 tbsp. apple cider vinegar
12 soaked sun-dried tomatoes (*optional)
1 tbsp. of lemon or lime juice (*optional)

*** Optional Sauce brands to buy: Boves or RAO’s Homemade Tomato Sauce

1. Wash all produce.
2. Using a Spiralizer device, spiral 6 zucchinis into a large bowl.
3. Using a food processor, mix all sauce ingredients until smooth.
4. To serve, pour raw sauce on top of zucchini “pasta,” and Enjoy!
